About Beef Types.

We have listed below some of the beef types that are generally considered premium brands but tons of the best beef in the country comes from a variety of cattle types. Texas Longhorn, English Hereford, and many other types of cattle can be graded USDA Prime and USDA choice (the grades sold by Chicago Steak Company). Generally speaking, the most important (and the only truly objective) aspect to consider when buying steaks is USDA grade but several cattle types have marketed themselves as premium and may or may not have a higher standard of quality than the USDA grading system.

Angus: Angus beef is the most popular premium beef in America and can come from either red angus or black angus cattle but the overwhelming majority is black angus. Angus beef display significant marbling which results in superior taste, tenderness, and juiciness to other domestic cattle. Our Black Angus, Premium Gold Angus, USDA Prime – Wet Aged , and USDA Prime – Dry Aged  lines fall under come from Angus beef.

Kobe | Wagyu: Kobe beef comes from Wagyu cattle and is well known for its marbling and high quality. Wagyu (meaning “Japanese Cattle”) steaks are prized worldwide for their astounding marbling, tenderness and juiciness. Better than even USDA Prime, these steaks are in a class of their own. Guaranteed to please even the most discriminating steak connoisseur, each luscious bite will literally melt in your mouth, as the marbling in a Wagyu steak begins to dissolves at a much lower temperature than common steaks.
